Spring Cookie Bars

I don't know about you, but when I see Cadbury Mini Eggs hit the store shelves it means spring is here! It could be pouring rain, cloudy, and grey but those little pastel colored eggs let me know that sunshine and flowers are on their way. Anyone else?
Growing up we would eat bags of these eggs at a time. If we were going out on a errand, we would always add these to the cart and then eat them as

we went store to store. These candies were a part of so many great memories of girl trips and shopping with mom.
I always love seeing how people incorporate Cadbury Eggs into what they're baking each spring. Cakes, cookies, macaroons, you name it! I have seen so many different desserts they've been included in. So, I wanted to do the same, and give you a recipe to sneak these addictive and crave worthy chocolates into!
Tips:
What does it mean to fold ingredients? Use a soft spatula to slowly mix the ingredients together until well combined. The key is to scrap around the sides and middle so that you're folding the dough on top of its self. Folding all the ingredients together allows you to mix in your flour and add ins without over-mixing, which can alter the texture of your bake.
Set aside a few Cadbury eggs and chocolate chips to place on top of your batter once it's in your pan. This gives you those pretty colors and and textures on top of your cookie bars once they're baked.
I always like to top my cookies with a little salt. Salty sweets make a great combination. I like using Fleur De Sel, a type of salt, to do this!
