Peppermint Bark Cookies

Merry Christmas season! I don't know about you, but one of my favorite flavor combinations of ALL TIME, especially at Christmas time, is chocolate and peppermint. Because of this, I make multiple batches of peppermint bark every year. I mean, I could eat an entire batch myself!

Well, I happen to love chocolate chips cookies as well! So I decided what better way to combine two of my baking loves, then peppermint bark cookies! Modeled after my favorite peppermint bark recipe from Baked From Scratch, this recipe includes dark chocolate chips, white chocolate chips, vanilla extract and of course, crushed peppermint. These cookies come together in a cinch and are perfect for gifting this holiday season, or enjoying with your family!
Tips
You can substitute all purpose flour for the bread flour if you need to, but it will alter the texture of the cookie! The bread flour has more protein so it bulks up the cookie a bit and gives a chewier texture. If you do use all purpose flour instead, the cookie will be more thinner and crispier!
I opted for dark chocolate chips to balance out the sweetness of the white chocolate chips, but you could use semi-sweet chips if it's what you have on hand.
With all my baking, I like to use a spatula to scrape down the sides of the batter in between each step. This ensures that everything is well incorporated as you add more ingredients.
I like to use parchment paper to like my cookie sheets. What you use to prepare your cookie sheets and what type of cookie sheets you use can actually affect your cookie's texture!
