Snickerdoodle Cookie Bars with Eggnog Frosting

I am all about quick and easy recipes. Yes, a more complex cake or macaron are fun to

make, but most of the time I'm making recipes that I can accomplish while one or both of my kids are napping! It's a bonus too if the recipe doesn't require a loud mixer, we don't want to wake a sleeping baby!


That being said, this Snickerdoodle Cookie Bar recipe is quick, easy, includes minimal ingredients, and doesn't require a mixer! Trust me when I say that these bars will come together in 25 minutes tops and into the oven they go! It is the holiday season, so I decided to fancy them up with an eggnog frosting. The frosting is delicious, but does require a mixer. If you'd rather keep things simple, skip the frosting! These bars can hold their own, without it.


Tips:

  • If you don't love eggnog, but want to make a yummy and pretty frosting to put on your bars just replace the eggnog with milk or cream!

  • To fold your ingredients, use a rubber spatula and gently fold the ingredients over the top of each other, scraping the sides of the mixture and going down the middle. Like a figure eight. This combines the ingredients without overmixing the dough!

  • Make sure your butter and eggnog (or cream) are room temp before using for the frosting. If the ingredients are too cold the frosting won't combine well and will split, creating a grainy, more oily texture.
